But we aren't compatible is he just saying this because my Venus is conjunct his North Node? I'm the read person in the synastry. This is our synastry and composite

Hi empathetic I do think your Venus on his north node could extend the amount of time you two are involved but not necessarily create emotional closeness. Perhaps it helps explain his comment that you are everything he is looking for: that comment may pertain to your style, your beauty, your kindness, every manifestation of your exalted Venus in Pisces. However, even beauty and kindness don't necessarily always add up to love and compatibility. Pardon my bluntness but if someone told me we weren't compatible, I would just be gone (Sag Venus here). Especially if the guy had a stellium in Sag including sun and moon. (!) But perhaps as a Taurus, you just don't let go of things (or people or goals) that easily? Composite sun-Venus opp Mars hitting your natal moon could also make this difficult to let go of, especially when the comp sun is at the base of a kite formation. In my experience, composite-kite relationships can feel difficult or impossible to walk out of. The structure is weirdly lasting, especially if it's hitting our natal chart strongly, as it is in your case.
