I like that ! There is a difference in the taste.
Although I admit I make the simple version of a pizza base with baking soda. Pfft. A lot of cheese and nobody tastes the difference. Oh I never tried pizza like that.. Just pancakes.

With the temps below zero this week, hot nourishing soups for us.
Today, it's cream of of potato served in a bread bowl with grated sharp cheese. To heck with calories ; i'll worry about them in the springπ

Oh I love soups. I got a food processor fro Christmas and been making cream soups non-stop I am on a fence today though. Soup or dumblings...

The past few days I've been into having a mandarin orange for breakfast, some snacks in between, and then a grilled salmon and some veggies for dinner. As Chinese New Year approaches (Feb 2nd), I was reading up on maybe some good rituals to do and apparently it's very lucky if you eat a mandarin orange and some fish on the day of, as it's supposed to symbolize luck and prosperity for the year ahead! Hopefully I didn't just jinx it but I thought the synchronicity was interesting Especially as my diet is rarely so consistent on a day-to-day basis

Turmeric soup. Curried tofu + orange pepper, onion, and spinach breakfast burritos. Potato and artichoke soup (that I still need to blend). Drinking an apple, lemon, ginger, and cayenne juice I bought on Saturday, when my stomach is empty (or almost empty).
I have other things I need to make, but I'm really depressed, so this over the last few days, has been good.
I will be trying to make red beans and rice. I need to make something called sofrito, and sazon first.

I've been eating this every day: * Homemade granola * Homemade almond milk * Berries, diced apple, raw pumpkin seeds, flax oil * Large unsweetened coconut flakes (not pictured....forgot to add them) Granola: 6 cups organic old-fashioned rolled oats 1/2 cup chopped pecans Handful sliced almonds Pinch of salt Lots of cinnamon These are all mixed in a large bowl. Then... 1/2 cup organic extra virgin coconut oil, warmed to liquid on the stove 1/2 cup Grade B maple syrup Splash of vanilla This is poured over the dry ingredients, all mixed together and spread out in a pan. More cinnamon shaken on top. Cook @ 350Β°F for ten minutes, stir, cook another 10 minutes, stir, return to oven, turn the oven off so the rest of the cooking is more like dehydration. Almond Milk: One cup almonds, soaked overnight in the fridge, drained 4 cups water Blended up together in a strong blender (I use a VitaMix). Strained through a nut milk bag or nut milk sieve (I use the latter). Return strained liquid to blender and add: 1 teaspoon vanilla 3 packets stevia (w/ erythritol) 1 Tablespoon raw agave nectar It tastes better with ALL agave nectar but my husband is trying to keep his sugar intake low. This still tastes amazing, in my opinion. Recipe is based off of one from Sarma Melngailis. Sorry this is all given in US measurements, but I assume most people won't be making this stuff anyway, I'm mainly laying it out in case anyone's curious about the ingredients. I'm addicted to this granola lately.

Could we some some salad suggestions please? I had one the other day with couscous, rocket, tiny fresh tomatoes and strawberries chopped into tiny pieces. The salty and sweet crunchiness was so refreshing.

I always make the same salad... - Crushed garlic in a bowl, pour extra virgin olive oil on top - Add frozen organic corn so it can begin to thaw - A mix of colorful diced vegetables (cucumbers, squash, peppers, red onion...) - Chopped spinach or arugula if I have some - Raw sauerkraut, a splash of apple cider vinegar, diced avocado and some spices like ground pepper and chipotle powder for "dressing" (not a dressing exactly, but it adds all the flavor) - Diced raw cheese if I'm hungry - Pumpkin seeds I'm very repetitious with my diet so I've eaten this probably at least 100 times. Ditto for the granola and this vegetable soup that I always make. Point being, I'm almost done giving everyone all my recipes. Edit: Oh, I posted my soup recipe on page 1. So those are my most common main meals for breakfast (granola), lunch (salad) and dinner (soup).

I'm supposed to be making black bean enchiladas. I was also supposed to be making a chicken dish, but I had horrible cramps from Thursday through Sunday, and then had a fever on Monday night, finally felt okay on Wednesday. I don't know if the chicken is still okay.
Still making my turmeric soup, and also making a Tuscan white bean soup, regularly. Those are mostly what I've been living on.

Orzo Pilaf - I had red pepper, onion, and orzo to use up:
Olive oil, red pepper, chopped onion, chopped mushrooms, 1 teaspoon of salt, 1/8th teaspoon of pepper, 1-1/4 cups of orzo, 2-1/2 cups of boiling water - add the last two when the other things have sauteed for a while. Simmer for fifteen minutes, and add 1/4 cup of chopped parsley at the end.
Turmeric Soup
Soaked black beans that I'd only used a portion of. I need to cook those next.
Learning to use an air fryer, but I've only cooked frozen food in it so far, and a grilled cheese that was too dry on the sides. I have frozen hash brown things in there right now.
I want to try making beignets, but I wish I could get the real thing in New Orleans.
I also want to try making my own cream cheese won tons, since we have cream cheese in the fridge, but I don't know where to find the wrappers, and it might be too much for me to focus on right now. Making them, I mean, before cooking. I usually pick a small side order up from a Chinese place, but don't want to be running to Canton when I don't need to be, and also don't know if they're open for take-out.
I've been drinking ovaltine, most days - either warm, or blended up as a milkshake, with flax oil added. I think I was having hot flashes for a while, which sucked. I may be speaking too soon, but since I've been drinking kefir and added probiotics again, and also flax oil added to that or the ovaltine, I've been fine. I'm not having to rush to open the window.

1) I like to prep a mirepoix mix to have on hand: diced onion, celery, carrot.
2) 'Made pizza sauce from a can of crushed tomatoes...it's thick.
3) I often make chicken stock.
So lately I've been sauteing those vegetables in olive oil, adding a tablespoon of pizza sauce, mix in some stock. Bring to a boil. Add brown rice pasta shells, canned/drained chickpeas, and sometimes a bit of frozen corn. Cheap bay leaf, thyme, salt & pepper.
I just cook that a few minutes with the lid on, turn the heat off.
Chop arugula and put it in a bowl with hot sauce; add soup and mix. Sprinkle with grated cheese.
I sometimes add diced avocado or a diced hard-boiled egg.
Lately I eat this a lot.

I made twice-baked potatoes this week, but they were too fiddly to make every week. Most of them are going in the freezer. I also made the lentil portion of a lentil shepherd's pie, last night. I need to make the rest of it, and then either have some for dinner, or also put that in the freezer.
There are other things I need to throw together, but I haven't been sleeping well, and I'm really tired. Also feeling emotional partly due to that.
